We opened our doors at Hambleton Hall in 1980. Like many of the others who opened or prospered in the ‘80s much of our restaurant inspiration came from France. Travelling from Relais to Châteaux in France in the late ‘70s we worshipped at the shrines of Michel Guérard, the Troisgros brothers, Georges Blanc and many others. Gravetye Manor, Hunstrete House, Gidleigh Park and Chewton Glen, whose proprietors were all friends, were fellow devotees.
