We encourage you to take over the whole house for a special occasion and enjoy the creativity and service we have to offer. Ideal for birthdays, anniversaries, board meetings and executive retreats, Hambleton Hall excels at making every guest feel incredibly well looked after.

The dining room seats 60 guests on mixed tables or 30 on one long table. The house sleeps 17 individuals or couples sharing.

Naturally your event will be unique so general manager Chris Hurst and restaurant director Graeme Matheson expect to discuss your requirements in great detail with you so they can develop a bespoke proposal. After which we will liaise closely with chef Aaron Patterson so he can design the perfect menus for your day and evening. Hambleton Hall has the longest retained Michelin star in the country, which coupled with Rutland’s rich supply of excellent quality produce means you can expect outstanding food. Special diets and preferences are always well considered and provided for. Resident sommelier Dominique Baduel will also be involved to assist you with wine choices if you wish.

On the ground floor of the house the entrance hall leads into the bar, the drawing room, the private dining room and the main dining room which both lead onto the terrace. This provides a comfortable flow of movement for your guests to mingle for a cocktail reception, enjoy drinks on the terrace overlooking the lake, a gala dinner and dancing. When you are ready to retire 15 bedrooms in the house and 2 in the adjacent the Croquet Suite will be turned down in preparation. Personalised turn down gifts are popular, and we will be delighted to make suggestions and deliver these discreetly before your guests return to their rooms.

"I brought a party for dinner on Saturday 3rd November to celebrate my 65th birthday and I just wanted to let you know how much we enjoyed the whole experience. We got a very warm welcome from everyone right from our arrival through drinks in the bar and then dinner in the library. The tasting menu and accompanying wines were superb; indeed a couple of our friends thought it was the best tasting menu they had ever had. All of our guests were quite effusive in their praise so well done to the whole team and we will definitely come again one day"

Spring is a season we all look forward to here at Hambleton Hall. The golden bursts from the daffodils, bright purples from the crocus and buds beginning to form their coats of green on the branches in our grounds. We’re celebrating a kaleidoscope of colour from our early tulips basking in the sun and the bluebells hiding in the shade. Not forgetting the start of our seasonal spring menus in the restaurant and moreish April dishes.

Join Tim Hart this morning as he takes us on a tou Join Tim Hart this morning as he takes us on a tour of the winter garden at Hambleton Hall.
Hambleton Hall is not offering home delivery durin Hambleton Hall is not offering home delivery during this lockdown, however chef Aaron is happy to share this recipe for his winter root vegetable terrine for you to try at home. 

Terrines can be beautiful dishes, served thickly sliced and at room temperature. 

Pick the most colourful array of vegetables you can find to turn this into a feast for the eyes as well as the taste buds.

Ingredients for the terrine
3 candy beetroots
4 parsnips
2 red carrot 
2 yellow carrot
4 turnips
1 celeriac
3 swede
250 g chopped parsley 
 
Ingredients for the stock
½ bottle of Madeira
500ml orange juice 
1 litre of Bouillion 
22 leaf gelatine or 6 agar agar 
 
Method
Make the stock by combining the ingredients in a pan until warm. Soften the gelatine in iced water before dissolving into the warm stock. If using agar agar, bring the stock to the boil with the agar agar already added.
 
Peel and chop all the vegetables and cut into even sizes. Cook separately until tender in seasoned boiling water
and leave to cool. Check seasoning levels and if necessary, add more salt, pepper, lemon and truffle oil. Line your terrine mould with 3 layers of cling film. Build your terrine by layering up the different vegetables, using a ladle to add the warm stock between each layer as well as a sprinkle of parsley. Leave to set for 24 hours. Once set, slice to required size and serve with artichokes, sliced truffle and your favourite dressing.

Beef is popular here as red meat is often something of a treat in one's diet. It is also a treat when it is cooked to perfection by Michelin-star chef Aaron Patterson.

On the menu regularly during the year, Aaron pairs a divine fillet with Jacob’s Ladder - otherwise known as short rib, slow cooked for hours for a perfectly soft finish. It is served with Aaron's own recipe shitake Ketchup and a red wine sauce.

Exquisite Acorn, a very popular superior room on t Exquisite Acorn, a very popular superior room on the first floor with sweeping views across Rutland Water, has received a thoughtful redesign. 

Stefa Hart and her team at Hambleton Decorating have added a new soft pink wallcovering in the bedroom which sets off the 18th century French-design curtain fabric beautifully. The arm chairs by the window have been reupholstered with new blue fabric with burgundy piping; and this area now enjoys new reading lamps.

We think this fresh design update suits the room wonderfully, and emphasises the charming gabled ceiling.
